Stuffed Bitter Melon/Gourd Soup

Ingredients

  • 2 large bitter melon
  • 1 lb ground meat/protein (chicken, beef, turkey or crumbled vegemeat)
  • 2 green onions, chopped
  • 2 cloves garlic, minced
  • 1 pkg mung bean noodles
  • 3 c broth
  • 3 c water
  • 2 tbsp. soy sauce or Braggs Amino Liquid
  • 2 tsp. sugar
  • 1 tsp. salt
  • 1 tsp. black pepper
  • 1 stalk of lemongrass, tied (optional)

Instructions

  1. Soak mung bean noodles in warm water until soft. Drain and chop noodles into small pieces.
  2. Cut and discard the ends of the bittermelon, then cut into pieces crosswise, 2 inch in length. With a small spoon, scrape the white pith and scoop out the seeds.
  3. In a large bowl, combine ground meat, chopped noodles, chopped green onions, and minced garlic, sugar and salt. Stuff bitter melon 'tubes' with this mixture. Use a spoon to secure both sides.
  4. Place the stuffed bitter melons and tied lemongrass (optional) in a large pot. Add the water and the broth. Bring it to a boil.
  5. Turn down heat and then simmer for 30 minutes or until bitter melon lose its bright green color and is fork tender.
  6. Add soy sauce, sugar or salt. Adjust according to taste.
  7. Transfer to a serving bowl and garnish with green onions.
